your belly full?

My mother is a chef so I grew up around amazing food. When I left home and lived in other countries, I realised I would have to learn to cook myself if I wanted to keep eating in the way I had been raised. I would call my mother for recipes and still to this day go to her for menu advice and cooking ideas.

 

My love of good food developed into a business when I opened a delicatessen--café in East London and again when I developed the restaurant at Manicou River, our eco hotel in Dominica.

 

Over the years I have explored recipes from all over the world and love to combine a wide range of influences and flavours in my cooking. But my first love and my true speciality is the unique Creole cuisine of the French Caribbean. 

 

Combining French culinary technique with fresh, tropical ingredients and unique influences dating back to the ingenuity of our enslaved ancestors, makes the traditional cuisine of my home some of the most unique and exciting cooking in the world. And my passion is to share it with you.
